About Us

Born in Kobe, Japan, Chef Nobu has been a pioneer in bringing authentic Japanese cuisine to Colorado. In 1987, he helped establish Sushi Tora (Tiger), where he shared his refined sushi techniques and deep appreciation for traditional Japanese flavors. Over the years, he continued to shape the sushi scene across Colorado. After the closing of Sushi Tora, Nobu remained dedicated to his craft, opening Tasuki (Sash) as a way to uphold and support the small yet strong Japanese community in Colorado. The restaurant’s name reflects this mission, and visitors can find numerous sashes from Japanese companies that relocated to Colorado, symbolizing cultural connection and heritage!
